Zucchini Soup

There?s everything else made from zucchini, why not soup? This one is also from Sue Nutt. This is a really good soup.

Ingredients

  • 1 lb. zucchini thinly sliced
  • 2 cups chicken broth
  • 3 T. butter
  • 1 tsp. lemon juice and curry powder
  • salt and pepper

Instructions

  • Cook zucchini in butter until soft (about 5 minutes, don?t brown).
  • Add chicken broth.
  • In a food processor or blender puree in batches until smooth.
  • Return to pot, add 1 teaspoon lemon juice, 1 teaspoon curry power and salt and pepper to taste.
