Zucchini Soup
There?s everything else made from zucchini, why not soup? This one is also from Sue Nutt. This is a really good soup.

- 1 lb. zucchini thinly sliced
- 2 cups chicken broth
- 3 T. butter
- 1 tsp. lemon juice and curry powder
- salt and pepper
Cook zucchini in butter until soft (about 5 minutes, don?t brown).
Add chicken broth.
In a food processor or blender puree in batches until smooth.
Return to pot, add 1 teaspoon lemon juice, 1 teaspoon curry power and salt and pepper to taste.
