Yeast Waffles

Jane Andrus, Chris’ mom gave me this recipe many years ago.  Make it on a Saturday night and bake them on Sunday morning.  They freeze well.

Ingredients

  • 3 cups flour
  • 2 cups milk
  • 1 pkg yeast
  • ½ cup warm water
  • cup melted butter or margarine
  • 2 beaten eggs
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp baking powder

Instructions

  • Heat milk, cool to lukewarm
  • Sprinkle yeast on warm water in large bowl and stir to dissolve
  • Add milk, margarine, salt, sugar and flour mixing with electric mixer until smooth
  • Cover with plastic wrap and let stand at room temperature overnight
  • When ready to bake add 2 beaten eggs and baking soda
  • Beat well

Makes about 8-10 waffles.
