All the years we lived in West Virginia and Tennessee, we were unableto get good pizza. My father-in-law Peteused to be a baker and taught me how to make the dough. Pizza became a staple at our house. As the children grew so did the pizza. At one point I used to make two large cookiesheets every Friday for dinner. Myfather-in-law, without fail, was there right after he finished dinner for aslice or two. I still make it occasionally, but I like Pizza Hut.
Ingredients
1pkgDry Yeast
1½tspSalt
1½tbspOlive Oil
1¼cupWarm Water
3-3½cupsFlourmaybe more
1cupYour Favorite Sauce
2cupsShredded Mozzarella Cheese
pepperoni, sausage, peppers, mushrooms, whatever!
Instructions
In a medium bowl, combine yeast with warm water,olive oil, salt and stir well
Let proof about 5 minutes
Add enough flour to form a soft but not stickyball
Transfer dough to a lightly floured surface and kneed,adding enough additional flour to make a smooth elastic dough
Place in an oiled bowl and cover with plasticwrap. Let rise for about 1 hour until double in bulk.
Sprinkle a 16” pizza pan with corn meal
Roll out dough to fit pan
Cover and let rest while you assemble the restof your toppings
Bake in a hot over 4250 until bottomcrust is golden brown

I usually cut mine with scissors. Don’t laugh if you haven’t tried it.
