Guacamole Pie
This is another of those “origin unknown” recipes. I have made it so many times, but I can’t remember where it came from. Ah, another “senior moment”
- 1 can refried beans
- 3 ripe avocados
- 8 oz. sour cream
- 1 cup shredded sharp cheese
- 8 oz. taco sauce
- 1 T. lemon juice
- 2 greenonions, chopped
- 1 clove garlic, mashed
- 1 tsp. salt
- Tortilla chips
In food processor put avocados, lemon juice, salt and mashed garlic.
Puree until smooth, add salt to taste.
Spread refried beans in bottom of a 9” pie pan.
Spread avocado on top, about 1 “ from edge.
Spread with sour cream to the edge of avocado mixture. This will prevent it from turning brown.
Spoon taco sauce over sour cream.
Sprinkle with cheese and green onion.
Serve with chips.
