Pizza

All the years we lived in West Virginia and Tennessee, we were unableto get good pizza.  My father-in-law Peteused to be a baker and taught me how to make the dough.  Pizza became a staple at our house.  As the children grew so did the pizza.  At one point I used to make two large cookiesheets every Friday for dinner.  Myfather-in-law, without fail, was there right after he finished dinner for aslice or two. I still make it occasionally, but I like Pizza Hut.

Ingredients

  • 1 pkg Dry Yeast
  • tsp Salt
  • tbsp Olive Oil
  • cup Warm Water
  • 3-3½ cups Flour maybe more
  • 1 cup Your Favorite Sauce
  • 2 cups Shredded Mozzarella Cheese
  • pepperoni, sausage, peppers, mushrooms, whatever! 

Instructions

  • In a medium bowl, combine yeast with warm water,olive oil, salt and stir well
  • Let proof about 5 minutes
  • Add enough flour to form a soft but not stickyball
  • Transfer dough to a lightly floured surface and kneed,adding enough additional flour to make a smooth elastic dough
  • Place in an oiled bowl and cover with plasticwrap.  Let rise for about 1 hour until double in bulk.
  • Sprinkle a 16” pizza pan with corn meal
  • Roll out dough to fit pan
  • Cover and let rest while you assemble the restof your toppings
  • Bake in a hot over 4250 until bottomcrust is golden brown

Notes

I usually cut mine with scissors.  Don’t laugh if you haven’t tried it.
