Guacamole Pie
This is another of those “origin unknown” recipes. I have made it so many times, but I can’t remember where it came from. Ah, another “senior moment”
Ingredients
- 1 can refried beans
- 3 ripe avocados
- 8 oz. sour cream
- 1 cup shredded sharp cheese
- 8 oz. taco sauce
- 1 T. lemon juice
- 2 greenonions, chopped
- 1 clove garlic, mashed
- 1 tsp. salt
- Tortilla chips
Instructions
- In food processor put avocados, lemon juice, salt and mashed garlic.
- Puree until smooth, add salt to taste.
- Spread refried beans in bottom of a 9” pie pan.
- Spread avocado on top, about 1 “ from edge.
- Spread with sour cream to the edge of avocado mixture. This will prevent it from turning brown.
- Spoon taco sauce over sour cream.
- Sprinkle with cheese and green onion.
- Serve with chips.
