Zucchini Bread
From a girl I worked with at MK Ferguson. Gosh I?m old. I forgot about it.
Ingredients
- 2 cups grated zucchini
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 3 cups flour
- 1 tsp. baking soda
- 1/2 cup sour cream
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1 cup chopped nuts
Instructions
- Grease and flour two 9?x 5? loaf pans.
- Mix flour, baking soda, baking powder, salt and cinnamon.
- Cream eggs, sugar and oil.
- Add dry ingredients to creamed mixture.
- Add sour cream, vanilla and nuts.
- Bake at 350 degrees for 50-60 minutes. Check with a toothpicks before removing from oven.
Notes
This recipe is versatile you can substitute 2 cups of mashed bananas for the zucchini and viola banana bread.
*when using dark coated pans reduce oven temperature by 25 degrees. Personally I use the foil pans from the discount store so you can throw them away.
