Stuffed Artichokes

This is another Christmas Eve must.  Mymother-in-law often made these.  They are wonderful.  Artichokes can be pricey during the holidays, but well worth it if you’re only making 2 or 3. I make these ahead and freeze them, then cook later. They are much easier to stuff if you cook them first.  I make this in the summer also and serve itas a main dish with salad and bread.

Ingredients

  • 4 globe artichokes
  • 1 cup fixed bread crumbs
  • ½ stick melted butter
  • 1 lemon
  • 2-3 cloves garlic
  • 2 tsp salt
  • olive oil for drizzling
