Pasta with Asparagus and Basil

This is another wonderful recipe I got from one of my mother-in-law’s cookbooks.  I gave you this a few years ago and you told me Jay poured a can of tomato sauce over it.  Okay Jay, we won’t do that anymore or you cook. I also gave this recipe to my brother-in-law Manny.  He has to cook one night a week when his wife Paula is working.  I wonder if he still makes this.

Ingredients

  • 2-3 tbsp olive oil
  • 1 med chopped onion
  • 1 lb asparagus cut into 1" pieces
  • 2 cups diced tomatoes canned are OK too
  • 1 lb pasta
  • 1-2 tbsp chopped fresh basil
  • 1 tsp salt
  • ¼ cup reserved pasta water
  • Pecorino/Romano cheese to taste

Instructions

  • In a large skillet, sauté onion until soft
  • Add tomatoes, asparagus, basil, and salt and pepper to taste
  • Simmer partially covered 10-15 minutes until asparagus are tender
  • Cook pasta in boiling water, about 10 minutes
  • Save some of the pasta water
  • Toss pasta with asparagus and cheese
  • This is not a dry dish.  If you think it is, add a little of the pasta water to make it saucier.
  • Add chopped basil and serve
