Zucchini Bread

From a girl I worked with at MK Ferguson. Gosh I?m old. I forgot about it.

Ingredients

  • 2 cups grated zucchini
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 3 cups flour
  • 1 tsp. baking soda
  • 1/2 cup sour cream
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 cup chopped nuts

Instructions

  • Grease and flour two 9?x 5? loaf pans.
  • Mix flour, baking soda, baking powder, salt and cinnamon.
  • Cream eggs, sugar and oil.
  • Add dry ingredients to creamed mixture.
  • Add sour cream, vanilla and nuts.
  • Bake at 350 degrees for 50-60 minutes. Check with a toothpicks before removing from oven.

Notes

This recipe is versatile you can substitute 2 cups of mashed bananas for the zucchini and viola banana bread.
*when using dark coated pans reduce oven temperature by 25 degrees. Personally I use the foil pans from the discount store so you can throw them away.
